Pago de Cirsus Gran Cuvée Especial is a red wine, made with grapes coming from Bolandín land in Navarra Baja area near Ablitas. It is one of the three best wines of the winery, therefore, it requires a thorough control from the own vineyard. Clusters selection has not only been done at the vineyards but also in the wine cellar. It is a question of choosing the most mature and smooth grains from 4000 kg low production with 1.60 kg yield per grape stock. The term “special cuvée” already indicates rigour and thoroughness of berries selection according to their ripeness, wisely combining different percentages, according to the year. It combines Tempranillo fruit, Merlot elegance and Syrah structure. Grapes are selected by hand, cluster by cluster, in 15 kg boxes per yard and varieties. A cold maceration is carried out at 5°C for first 24 hours, later to be fermented in French oak tubs to continue ageing in new oak barrels for 14 months.
It is characterized by its attractive maroon cherry colour, with black fruit aroma (blackberry and blueberry compote) with fine spicy and toasted touches (coffee, chocolate). Intense taste in the mouth, wide, full, warm, spicy, with ripe fruit and toasted creamy.
