Wine description

The term quitanilla says the size of a winery that occupies the approximate space of a family home garage. This means that it would only fit a few barrels and a few tanks, usually small, where the wine is housed and the owner’s ability to control quality in an artisanal way. This is how Baigorri works, steeped in the philosophy of calm and rigor. To be worthy of this rank it is essential to have a very old vineyard. Baigorri is 75 years old located in the heart of the Rioja Alavesa: Samaniego. Worked from a philosophy of sustainable viticulture and in harmony with Nature.

Made with 100% Tempranillo grapes, the grapes were selected by hand, grain by grain, with a careful selection process, using selection and vibration tables. A long pre-fermentation maceration was carried out in wooden vats. Once the alcoholic fermentation was completed, the pressing phase was carried out in a vertical press used especially for this wine. Later, the malolactic fermentation was carried out together with its lees in new French oak barrels. The aging of this wine was controlled by a tasting panel that analyzes all the barrels regularly and decides how long the wine will remain in these containers. Finally, the wine rested in French oak barrels for 22 months.
