Wine description

Pago de Cirsus Vendimia Seleccionada comes from young vines located in the Navarrese town of Ablitas with an average age of 20 years, located 350 meters above sea level. Production reaches an average of 4,800 kg per hectare and a very low yield per vine of just 1.71 kg. The climate is extreme continental, with very cold winters and very long and dry summers.

The selected vintage is due to the choice of ripe bunches, with smooth berries that do not reach raisin notes. It is distinguished by the toasted nuances of the ripe skin added to those acquired from the fresh pulp and with a balanced acidity. It is the “crianza” version of Pago de Cirsus, but without the slightest hint of pursuing the commercial line that reveals this type of wine in a large number of wineries. The selection by hand, bunch by bunch of the Tempranillo and Syrah already reveals this purpose. The harvest was taken to the winery in boxes of 15 kg by plots and varieties. Cold maceration was carried out at 5ºC for the first 24 hours and then the wine fermented 30% in French oak vats and the remaining 70% in steel tanks. The mixture of the two was aged for 12 months in new French oak barrels.

It could be said that it is the fruitiest of the Pago de Cirsus wines, a wine with a very pleasant, tasty persistence on the palate, with a deep aroma and flavor of black fruit and a creamy toasted background from its aging in barrels.
