Wine description

Eylo Rueda white wine from the Rueda Designation of Origin, comes from old vines in the Serrada area, Valladolid.

Made with 80% Verdejo and 20% Viura, it was a model of the Rueda whites from before, but with current technology. The harvest was scheduled according to the maturation of each of the vineyard plots. The speed of the harvest and the selection of plots were achieved thanks to the harvesting machines, which allowed the harvest of those vineyards that have reached the ideal parameters. The harvest was carried out at night in order to avoid oxidation in the musts. The must was macerated with the skins for 6-12 hours at a temperature of 6-8ºC. With this maceration, a greater extraction of the varietal character was achieved, as well as enhancing the sensations in the mouth. Fermentation took place at a low temperature, 14-16ºC, which helps to maintain the fruitiness and personality of the grape. After fermentation, the wines were kept in contact with the fine lees for a period of time, to enhance the structural characteristics of the wine, providing fatty acids and broader, more glyceric sensations in the mouth.

A classic, fruity Verdejo, with hints of ripe white fruit, with the volume and bitter touch of the Verdejo variety and the fluidity and lightness of the Viura. Nice straw color with greenish edges. Aroma with hints of herbs, floral and balanced with a tasty palate and good acidity. If you like rueda wines, you will fall in love with this Verdejo.
